Crafting a Distinctive Apple Gin RTD for Tasmaniac Distillery

Working with Tasmaniac Distillery enabled us to deliver one of this year’s more technically rewarding projects. The brief was clear but ambitious. Tasmaniac wanted a Ready-To-Drink (RTD) beverage that felt undeniably local, carried a strong sense of place, and showcased Tasmania’s apple profile in a way that complemented their existing gin rather than competing with it. Our role was to take that early concept and turn it into a commercially viable, scalable product that met strict production, quality, and cost objectives.

The Challenge: Crafting a Balanced, Apple-Forward Profile

The first major challenge was sourcing the right type of apples. Tasmania’s apple varietals each bring different sugar levels, acidity, tannins, and aromatic compounds, and these characteristics behave differently once combined with gin. Too much malic acid, and the beverage becomes sharp; too much sugar, and the finished product risks fermentation instability and loss of clarity. Finding a balance that would create a clean, bright, apple-forward profile required extensive bench trials.

Another challenge centred on cost. Tasmaniac wanted a premium product but needed it to be produced within a strict budget. This required a combination of ingredient optimisation, supply chain negotiation, and selecting a manufacturer capable of delivering consistent quality without inflating operational expenses.

Our Approach: Technical Development Backed by Production Expertise

From the outset, we ran structured sensory and stability tests on several apple extracts and juices to determine which varietals carried the right esters and volatile compounds to work harmoniously with their gin base. After multiple iterations, we developed a proprietary blend derived from locally grown apples that offered both authenticity and stability throughout the RTD’s whole shelf life.

With the recipe finalised, we moved into production planning. This included:

  • Supply chain coordination: We secured packaging and ingredient suppliers, prioritising local partners where possible to reduce lead times and ensure reliability. Long-term relationships across the industry allowed us to negotiate favourable terms for cans, labels, flavour components, and base spirits.
  • Manufacturer cost negotiations: Working closely with the contract packer, we aligned production costs with Tasmaniac’s budget requirements. This involved optimising run sizes, minimising wastage allowances, and securing competitive rates for blending and filling.
  • Quality control management: We developed a Quality Control (QC) plan that covered spec checks for Brix, pH, Alcohol by Volume (ABV), dissolved oxygen, turbidity, and organoleptic consistency. Throughout production, we oversaw verification at each stage, ensuring that the final batches met the approved recipe and compliance standards.

Challenges Overcome Through Practical Problem-Solving

One of the key breakthroughs came from adjusting the apple blend to reduce the natural haze without relying on heavy filtration, which risked stripping flavour. We obtained clarity while preserving the profile by leveraging a special apple variety with lower pectin levels and pairing it with a stabilising herbal note.

Another major win involved cost management. Through long-standing industry relationships, we sourced packaging components at rates below projected costs, allowing Tasmaniac to keep final production within budget while still using high-quality materials. This combination of technical refinement and commercial negotiation helped deliver a beverage that met both flavour expectations and financial targets.

The Result: A Distinctive, Regionally Inspired RTD

The finished apple gin RTD delivered exactly what Tasmaniac set out to create. It showcased the crisp, aromatic character of Tasmanian apples while maintaining the botanical complexity of the gin. Production ran smoothly, quality controls were met across all metrics, and the final unit cost landed comfortably within the original budget.
